Fava beans
Fava beans are cultivated at altitudes of 2,500 to 3,800 meters in regions such as Amazonas, Ancash, Apurímac, Arequipa, and several others throughout Peru. These beans are rich in proteins, fiber, iron, and folic acid, making them highly nutritious food.

RECIPE – Fava Bean Risotto

- Prepare the Fava Beans: If using fresh fava beans, boil them in salted water for 2-3 minutes, then peel off the outer skins. Set aside the peeled, cooked beans.
- Sauté Onions and Garlic: In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft, about 3-4 minutes. Add the minced garlic and cook for another minute
- Cook the Rice: Add the Arborio rice to the pan and stir to coat the rice with the oil. Cook for about 2 minutes, stirring constantly, until the rice becomes lightly toasted.
- Add Wine (Optional): Pour in the white wine (if using) and stir until it has mostly evaporated.
- Add Broth Gradually: Begin adding the warm broth one ladle at a time, stirring frequently.
- Let the rice absorb the broth before adding more. Continue adding broth and stirring for about 18-20 minutes until the rice is creamy and al dente.
- Add Fava Beans: About 5 minutes before the rice is done, stir in the cooked and peeled fava beans.
- Finish the Risotto: Once the rice is tender and creamy, remove the pan from heat. Stir in the butter and grated Parmesan cheese. Season with salt and pepper to taste.
- Serve: Garnish with fresh parsley and more Parmesan if desired. Serve hot.
