- Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes
- Add Zapallo Loche and Spices: Add the cubed zapallo loche to the pot, along with the turmeric, cumin (if using), salt, and pepper. Stir and cook for 2-3 minutes.
- Add Broth: Pour in the vegetable or chicken broth, bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the zapallo loche is tender.
- Blend the Soup: Use an immersion blender to blend the soup until smooth, or transfer to a blender and puree in batches.
