Zapallo loche

Zapallo Loche, found at sea level to around 1,200 meters in regions like Lima and La Libertad, is a nutrient-rich squash notable for its beta-carotene, antioxidants, fiber, and vitamin C content. These nutrients enhance immune function, support digestion, and promote overall health while being low in calories. Although generally safe to eat, individuals allergic to squash or similar vegetables, such as pumpkins and zucchinis, should consume it with caution.

  1. Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes
  2. Add Zapallo Loche and Spices: Add the cubed zapallo loche to the pot, along with the turmeric, cumin (if using), salt, and pepper. Stir and cook for 2-3 minutes.
  3. Add Broth: Pour in the vegetable or chicken broth, bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the zapallo loche is tender.
  4. Blend the Soup: Use an immersion blender to blend the soup until smooth, or transfer to a blender and puree in batches.
  5. Serve: Ladle the soup into bowls, garnish with fresh parsley or cilantro, and serve warm.
