Scallops

Scallops, known as “conchas” in Peru, are primarily found in the cold waters of the Pacific Ocean, especially in the Pisco and Paracas areas of the Ica region. They are rich in proteins, omega-3 fatty acids, vitamin B12, and selenium, making them beneficial for lowering cholesterol and supporting heart health. However, like other shellfish, scallops may pose a risk for individuals with seafood allergies and should be consumed with caution by those with sensitivities.

  1. Prepare the Scallops: Clean the scallops and remove any tough muscle if needed.
  2. Marinate in Lime Juice: Place the scallops in a bowl and pour the lime juice over them.
  3. Allow the scallops to marinate for 10-15 minutes until they become opaque and “cooked” by the acid in the lime juice.
  4. Add Ingredients: Stir in the sliced red onion, chopped ají limo, cilantro, salt, and pepper.
  5. Serve: Serve the ceviche with boiled corn kernels and sweet potato slices for a traditional Peruvian touch.
